Quick and Easy “Healthy” Meal Ideas
Do you know when you don’t want to cook? That is a great time when you can make quick and easy meals. You know what is even better when you can make double the amount and bring it for lunch the next day. It’s a win, win either way.

This breakfast has always been one of my go-to for years. They are so yummy and one of the simplest breakfasts you can make. Do you know those bananas that are too ripe to eat? Well, this recipe by The lazy dish can be a great way to use them up. It’s three ingredients that you probably already have in your kitchen. Top it with anything you want and enjoy.
2. Hash Brown Ham and Cheese Cups
When I saw these I was so excited. You can not tell me that these cheese cups do not look delicious. I specifically picked these from todays creative life because they had simple and easy ingredients. We are all about that lazy life and we don’t need to make our meals complicated.
3. Healthy Apple Pie Oatmeal Cookies
If you want to prep something easy to grab, these cookies look amazing. They are like small apple pies you can take on the go. Amys Healthy Baking killed this recipe by taking something that looks unhealthy and making it not that bad for you. This recipe is perfect to prep on a Sunday and great to grab throughout the week. It is a yummy dessert idea as well.
4. No Bake Energy Balls
Here is another quick and easy recipe you can make ahead of time. These no-bake energy balls are filled with protein and packed with great flavor. Who does not want dessert for breakfast? This recipe is made by Build Your Bite and is perfect for the person on the go.
5. Balsamic Roasted Tomato & Hummus Toast
There are more sweet recipe ideas than there is savoy, I had to add one in. This one just sounded and looked delicious. I know hummus for breakfast does not sound ideal but I bet with the balsamic vinegar and cherry tomatoes it could be an amazing breakfast. This recipe by Georgie Eats is 100% the next breakfast recipe I am trying on a Sunday morning.

WhWhen I saw this recipe, I was ready to go grocery shopping for all the ingredients. It just looks so fresh and healthy. Guess I know what I will be preparing for the next week. Chelsea’s Messy Apron makes the recipe so easy to follow. Look at how many vegetables are in this recipe. Such a perfect recipe to kick off the summertime.
2. Chickpea Salad Sandwich
If there is one lunch that I keep going back to, it’s this chickpeas salad sandwich. Now don’t get me wrong the normal tuna and egg salad sandwiches are delicious, I just like to change it up every once in a while. I do like to put my spin on mine but this one by 40 aprons is a great start.
3. Baked Honey Garlic Chicken Thighs
This recipe is an easy meal you can prep ahead and have ready for the whole week. Just buy a bunch of chicken on Sunday, marinate it in the sauce, bake it, and boom you, are done. One clever chef has a coleslaw you can add on the side as well.
4. Rotisserie Chicken Salad
If you can prep ahead it is so much easier and better. This is a low-carb meal that you can prep in two separate containers to bring to work with you. Little Pine Kitchen makes it easier for you by having you use rotisserie chicken you get from the store. Throw it all together in a bowl and make it for lunch.
5. Vietnamese spring rolls
Spring rolls are so much fun to make and delicious. I love them because you can add whatever you want and, they still turn out great. They stay compact so you can bring them for lunch with you. This recipe by watch what u eat gives you such a good idea and provides a delicious peanut sauce you can have on the side.
1. 20 Minute One Pot Pasta
You can never go wrong with pasta. It is super quick and easy and can be made to be good for you. This recipe is by spaceshipandlaserbeams. It is such an easy recipe and you probably have everything you need in your pantry. You also can’t beat the time!! Making a 20-minute pasta that is not topped with a jar of sauce can’t be beaten.
2. Grilled Chicken Caprese
Who does not love a good Caprese Salad? Now take that idea and put it on a chicken breast. If that idea sounds good to you, then Chef Savvy has you covered. Mozzarella melted on top, a tomato, and a balsamic reduction sound mouth-watering to me. You could even take this and added it to a salad with a balsamic dressing. YUMMY!!
3. Cauliflower Tacos
I had to include something with cauliflower in this list. I love cauliflower and how versatile it is. These cauliflower tacos by Two Peas and Their Pod has tons of flavor. I have a taco recipe on my Instagram that would be great with these tacos.
The nice thing about these tacos is you can change up the recipe as well. You can add different vegetables or toppings that you like.
4. Chicken Parmesan Stuffed Zucchini Boats
Craving pasta but not feeling the carbs today? Not a problem. Try out these stuffed zucchini boats. I have made these before and, they are delicious. This recipe was created by Instru Pix. You can stuff them with anything you want, you can even turn them into little pizzas. Such a fun, easy versatile meal. It is a great recipe to go towards when you have some leftover zucchini. Also, great to prep and bring for lunch the next day.
5. Lemon Pasta
I don’t know if it is the weather warming up but I have been craving lemon so much lately. With that being said, a really quick and easy recipe to make is this lemon pasta. This one by Pinch and Swirl looks so satisfying. A good lemon pasta is not heavy and great for the soul.
